Thought it best to move it over here and not interrupt the BST post.

So here's how I'm doing dinner this evening:

Start with high quality fish. Given a choice unless you live next to the coast buy frozen not fresh. I caught this off Kodiak Island last July::

I would prefer to grill the halibut but it's a bit chilly out so I'm going to saute the fillet. I like to use a combination of clarified butter and Citron extra virgin olive oil. Don't buy that pomace and second press stuff, it has no flavor at all. Here's the citron I like to use:

I also like just a hint of this:

As a final touch I like to use this as a final light rub. I like the blend of lemon/lime and I like cilantro as well. It adds a big burst of flavor if you don't have fresh cilantro to dice...

I'm going to serve the halibut on a bed of basmati rice. If you're not familiar with rices shop around. Anything is better than white rice..

For a side I made a quick pasta dish. Here's the tri-color pasta being drained. Sort of looks like slugs in there huh?

Take the pasta and mix with this. Dice the artichokes a bit. Slivers seem to be easy to stab with a fork:

And this. Actually this is a great excuse to clear out any vegetables that may be lurking in the fridge.

Blend all this with whatever Italian dressing you have in the refrigerator door.
